Ingredients

All-Purpose Flour
2 Cups
Baking Powder
1 1/2 Teaspoons
Salt
1/2 Teaspoon
Cinnamon, ground
1 Teaspoon
Eggs

Granulated White Sugar
1 Cup
Vegetable Oil
1 Cup
Carrots, finely grated
2 Cups
Apple, grated
1 Cup
Walnuts, coarsely chopped
1/2 Cup
Raisins or Currants
1 Cup

Steps

  1. Preheat oven to 180 degrees celsius
  2. In a separate bowl sieve flour, baking powder, salt, and ground cinnamon.
  3. In another large bowl beat the eggs, sugar for 5-6 minutes. Add oil to the above and beat until slightly thickened.
  4. Beat lightly in the flour mixture until incorporated.
  5. With a large rubber spatula fold in the grated carrots, grated apple, chopped nuts, and raisins.
  6. Pour the above to paper lined or greased cup cake tray, filling the cups 2/3 full. Bake for 18-20 minutes or until fork or tooth pick inserted into the cake comes out clean.
